I was craving something quick and had some black figs and ricotta around. With a flammkuchen base and topped with lemon zest, honey and a pinch of salt.

Ingredients
- Flammkuchen
- 100g all purpose flour
- 60ml water
- 1 tbsp sugar
- 100g ricotta cheese
- 1 tsp salt
- 1 tsp lemon zest
- 1 tsp honey
- 1 tsp salt
- 40g walnuts
- 275g black figs
Instructions
- Mix 100g all purpose flour, 60ml water and 1 tablespoon sugar and knead until a dough is formed. Leave to rest for 15 minutes.
- Roll the dough as thin as possible (~1mm) in a baking tray.
- Preheat the oven at 220ºC (~430ºF).
- Mix 100g ricotta cheese, 1 teaspoon salt and 1 teaspoon lemon zest and spread over the flammkuchen dough.
- Add 40g chopped walnuts and 275g black figs in small pieces on top of the ricotta.
*The figs I had were really sweet and decided to leave them raw, but since the flammkuchen dough bakes really quickly, you can also pre-toast the figs. - Bake in the over for 5-10 minutes until the dough starts to get brown.
- Finish the flammkuchen toping it with some lemon zest, honey and a pinch of salt.
